Beers Brewed:

 

Clear and Stormy (4.8% abv) A ginger-lime hard seltzer and our first foray into the world of hard seltzers. Made with only whole ingredients, it’s bone dry, crushable and perfect for summer. 

Cherry Seltzer (5.1% abv) Made with just cane sugar and Bing cherry juice, this bright red and bone-dry seltzer has notes of cherry pie with heavy rosé vibes. Refreshing and gluten free. 

Partly Cloudy (5.1% abv) Our summer lager is brewed with pilsner malt and oats. Dry-hopped with citra and cashmere. It has a strong northwest IPA aroma with summer beer drinkability. 

Something New Zealand (6.2% abv): Hopped with New Zealand grown Pacifica and Moutere. Fruit forward west coast style IPA. Notes of lime, pineapple, grass and general dankness. Rustic and incredibly bright. 

Requiem Red IPA (6.3% abv): When we first opened, we received a lot of requests for a red or amber ale. We decided it was time to do a hybrid of styles using a blend of Pilsner and Vienna malts with a bit of chocolate malt tossed in.  Fermented with Norwegian farmhouse yeast and dry hoped with cashmere, this bright, fruity IPA has the classic toffee and caramel notes lurking in the background. 

Hood Canal Oyster Stout (6.1% abv): A collaboration with Alderbrook Resort. Classic oatmeal stout brewed with oysters from the Hood Canal. Smooth, smoky and savory with subtle notes of brine and umami. 

Past Structures (5.8% abv): A robust American style amber ale brewed with locally foraged spruce tips. A balance of crisp and malty with a dry resinous finish. Hopped with Chinook Hops.

Not a Deer (5.1% abv): A lager inspired by the vibes of fall. Light roasted notes, hints of berries and earthy grain. Intended for safety in the forest during hunting season.

Lilliwaup Lager (4% abv): Helles style lager, malt forward but light and crisp. Using malted barley grown in Western Washington. Hopped with Monroe.

A New Classic (6.5% abv): a blend of west and east coast IPA, soft grapefruit and pineapple notes with hints of pine and cedar. Smooth and fruity. Hopped with Idaho Gem, Chinook and Cascade Hops.

Landbier (4% abv): rustic unfiltered Pilsner. Notes of grass and baked bread. Hazy and full bodied with a sharp hoppy finish. Hopped with Styrian Eagle Hops.

Cherry Fizz (6% abv): farmhouse ale with loads of sweet Bing Cherries added. Extremely fruit forward with a crisp acidic finish. Pink beer can be very fun.

Dark and Smooth (4.1%): Our flagship Brown Ale, notes of coffee, chocolate and molasses with a very crushable semi-dry finish. Wonderful with raw oysters.

Pale Ale (4.5%): America style Pale Ale, classic pine and orange notes from Norwegian farmhouse yeast and Chinook hops.

Local Vibes (6.4%): Fresh hop IPA using just hops gathered in Mason County, crisp, dank and fruity.

Sunshine Shandy (3.9%): Rustic, tart and refreshing. Farmhouse ale with coriander, locally foraged pineapple grass, oranges and lemons.

Buckwild and Bramblefree (5.1%): A collaboration with our Olympia friends: Headless Mumby and Well 80, a Dunkel (dark) lager brewed with buckwheat, malty and rich with rustic earthy tones.

Caves Made of Grass (6.6%): Cold IPAs are quite hot right now and we wanted to explore the style. Fermented with a lager yeast and lagered with 40 days with Cascade and Cashmere hops. Dry, resinous with hints of citrus and melon.

Then a Strange Thing Happened… (7.1%): Double dry hopped hazy IPA, hopped with New Zealand grown Cascade, Eldorado and Columbus. Fruit forward and dank.

Flowers made of Fog (6.1%): Hazy IPA brewed with rose petals, South African Southern Aroma, Trident and Lemon Drop hops. Fruity, floral and soft. A juicy smooth IPA for the 21st Century.

Grilling in the Dark (4.5%): Pub-style stout, dark and roasty but dry enough to be easy going. Though the days are getting longer, most of us are still Grilling in the Dark.

Subtle Eldritch (8.3%): Inspired by the monastic tradition of Dubbels this rich dark ale is dry, boozy and fruity. Perfect for a dark winter day. Notes of molasses, dried fruit and smoke.

4:00 PM (7.7%): Baltic Porters are pitch black strong beers fermented with lager yeast. Hints of chocolate, coffee and smoke. Very smooth from the 40 day lagering process.

Keep it Clean! (4.1%): Spring Lager, brewed with Super Vienna malt and South African Southern Aroma hops. Mashed at a low temperature to create a bone-dry crisp finish balancing the malt character.

Burn Ban Backup Beer (6.2%): A rich bock made with maple smoked wheat. If you can’t make a fire this summer, at least you can feel like you’re at one.

A Little Light (6.5%): Belgian Golden Ale. Crisp, fruity with soft herbal notes. Brewed with coriander from Highwater Farms, Skokomish Valley.
